Spizzikò is the innovative and versatile Nucleo® for bakery with wholemeal rye flour. This bread-making mix makes it possible to make rustic breads, rich in bran and with a regular texture. The rye bread so produced is excellent when combined with sliced ham, cheeses and fruit jams. It can also be enriched with dried fruit, to enhance the flavor and give a touch of crunchiness.

Spizzikò mix can be used with either a Nucleo® dosage or 100% dosage, depending on taste or production needs.
To simplify the work of the artisan baker, the Nucleo® dosage is studied to always obtain 10. In this way it is possible to quickly calculate the right quantity that the baker add to the flour. This Nucleo® does not have a predefined dosage but can be customized, depending on the bread you want to obtain: 3 kg of Nucleo® + 7 kg of flour, 5 kg of Nucleo® + 5 kg of flour or 100% dosage.
